NH Nappage Pectin is a gelling agent used for filling and pastry toppings made from fruit pulp.
With the NH topping pectin you get a thermoreversible gel, with very good hold for fruit-based preparations.
Very appreciated for the realization of the inserts, for the toppings of pastries with undiluted fruits. With NH Nappage pectin you get a firm and shiny gel.
Dose 0.8 to 2% of NH Nappage pectin in your preparation, depending on the pulp content. (10g / kg of topping). To prevent lumps from forming, pre-mix the NH pectin topping with some of the sugar, then disperse in water. Dissolution in about 15min.
Ingredients: amidated pectin E440ii, disodium disphosphate E450i, dextrose, tricalcium phosphate E341iii.
