Timut pepper comes from Nepal. It has seduced the greatest pastry chefs and cooks with its exceptional flavours, such as Cédric Grolet's 2018 galette des rois with a Timut pepper frangipane, or Éric Briffard's golden scallops with Timut pepper.

On the nose, Timut pepper has aromas of grapefruit, yuzu, citrus fruits and a very fresh fragrance. On the palate, this pepper is not very spicy, with a nice length, very fresh notes of yuzu and grapefruit.

Timut pepper can be used in a variety of recipes, in lemon madeleines, rhubarb pie, combined with citrus fruits or vanilla... It is very popular with shellfish and fish for savoury dishes.

You can use the whole peppercorns in "infusion" in the preparations, or grind it in a pepper mill to incorporate it in your preparations.
