The history of Guanaja: In 1986, Valrhona created the most bitter chocolate in the world with 70% cocoa: a real challenge. This was the beginning of the precise selection of cocoa beans, because with such a low proportion of sugar, nothing could mask the defects. GUANAJA was immediately a revolution and became a reference.

The blend of cocoa beans: GUANAJA is made from a marriage of great vintages with aromatic profiles of typical cocoa beans from Trinidad, Dominican Republic, Jamaica, Ghana, Ivory Coast and Madagascar. These profiles are blended to achieve the consistent and unique taste of GUANAJA, revealing subtle aromas of dried fruit and roasted coffee.

Pastry combinations: Easy to work with, GUANAJA goes particularly well with oriental spices such as ginger or tonka bean. The recipes it enhances are those that give pride of place to pure chocolate, such as semi-cooked or chocolate mousse.
