Pectin NH Topping is a gelling agent used for fillings and coating, made from fruits.
With this pectin you will obtain a thick and shiny thermoreversible gel, with a great stability for fruits-based preparations.
Very popular for inserts, pastry toppings with undiluted fruits.
Dose 0,8 to 2% of pectin NH Topping in your preparation according to the pulp content (10g/kg of topping). To avoid lumps, pre-mix the pectin with some sugar, then disperse in water. Dissolution happens in 15 minutes.
Ingrédients: amidated pectin E440ii, disodium diphosphate E450i, dextrose, tricalcium phosphate E341iii.
